Cobra Cooler (Harira)
beverages, dairy, indian
1/2 litre milk
15 pepper corns freshly
1 pulverized
3 tablespoon sugar
4 cardamom pods, shelled
125 gm seedless resins
60 gm almonds, blanched
"Nagapanchami in July or August is a day set aside for the cobra. It is meritorious on this day to feed cobras, which are sacred to the Hindus, with an offering of milk. Usually there is a bit of milk left over in the pantry after feeding the snakes. Always the day is hot, so almond and spices will be mixed with the left over milk and made into a cooling drink.
Process pepper, raisins, almonds and sugar with 0.25 litre water to a fine puree. Add milk and blend at high speed for a minute. Taste for sweetness, and add more sugar if desired. Strain through several layers of cheese cloth. Chill before drinking."
