Alu Tari (Potato Curry)

500 gm potatoes
250 gm tomatoes
40 gm ghee or butter
1 teaspoon turmeric
1 teaspoon cumin seed
1 teaspoon chilli powder
1 salt to taste

Peel and dice the potatoes. Chop the tomatoes. Melt the ghee and add the potatoes, turmeric, cumin and salt and fry for 5 minutes. Add the tomatoes and chilli powder and fry for 2 or 3 minutes. Now add enough hot water to cover the potatoes. Bring to the boil and simmer till potatoes are cooked. There should be plenty of gravy.
