Bhoona Curry

----SPICE MIX----
1 teaspoon garam masala
1 teaspoon ground coriander
1/2 teaspoon chili powder
1/2 teaspoon turmeric
----OTHER INGREDIENTS----
1 1/2 lb cubed lamb or beef or pork or chick; en
2 tablespoon ghee or vegetable oil
1 medium onion
2 medium tomatoes
2 cloves garlic
1 tablespoon vinegar
2 oz coconut; creamed or dessicated equ
1 salt to taste
Bhoonas are dry curries with a rich, creamy coconut sauce.
1. Heat oil or ghee. Fry meat for 5 to 10 minutes.
2. Blend the onion, garlic, tomatoes and vinegar.
3. Stir-fry the blend, spice mixture and coconut for 5 minutes.
4. Combine the meat and the fried blend. Simmer until the meat is tender (or cook in 375F oven). The dish should be quite dry with a little bit of gravy. Stir frequently, adding a little water if it sticks. Add salt to taste. From: Diane Lazarus Date: 10-12-94
