Raita Plus
indian, side dish
2 cup yogurt (may be fat - Free)
1 tablespoon lemon juice
1 tablespoon finely chopped fresh cilantro
1 teaspoon cumin seed, crushed
3 cup combination of:
1 boiled potatoes
1 cucumbers
1 fresh tomatoes all chopped in 1/2; inch pieces
1 frozen, thawed peas
Beat yogurt in a glass bowl. Add lemon juice, cilantro and half of the crushed cumin. Add the vegetables and mix well.
Decorate with a few cilantro leaves, sprinkle with remaining cumin seeds:
Variations:
1. Dilute with water or add a few ice cubes, adjust seasoning and use as a summer soup.
2. Serve the yogurt sauce alone without the vegetables as an accompaniment to meat, fish or poultry.
3. Use the yogurt sauce as a salad dressing or substitute it for the mayonnaise and sour cream (uncooked) in recipes for pasta salads, rice salads, etc.
4 Substitute two to three cups of a combination of other chopped raw or cooked vegetables (eg, cauliflower, carrots, celery, broccoli, green beans, etc)
