4 chicken portions
----MARINADE----
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon cardamon seeds
1 teaspoon ginger
2 teaspoon garlic
2 teaspoon paprika
4 drop red food colouring
150 ml thick yoghurt

Preparation TIme: 25 minutes + marinating Cooking Time: 15-20 minutes 1. Skin the chicken and place in a bowl. Slash the chicken pieces with a sharp knife to help the flavours penetrate more quickly when marinating. Dry roast and grind the cumin, coriander and cardamom seeds. Put all the marinade ingredients into a food processor to give a smooth red mixture. Pour over the chicken pieces, mix well, cover and leave for 24-36 hours in the fridge. 2. Heat the grill to maximum then lay the chicken pieces on the hot grill rack. Grill for 15-20 minutes turning occasionally and basting with any leftover marinade.
