Onion Garlic Tarka

3 tablespoon vegetable oil
1 small onion sliced thin
3 garlic cloves chopped fine
1/2 teaspoon ground red pepper
1/4 teaspoon turmeric
1 fresh coriander leaves for
1 garnish
1 mixed dal
1 tablespoon yellow split peas
1 tablespoon red lentils
2 tablespoon split mung beans
2 tablespoon split yellow lentils
1 medium tomato, chopped
2 or 3 curry leaves
1 (optional)
1 juice of 1 lemon
1 teaspoon salt
1 inch piece of ginger peeled
1 and grated

According to Isamil Merchant in "Passionate Meals" a tarka is something fried in oil that is used for a topping or mix in for dal. For example he has a recipe for onion-garlic tarka that is used to top a mixed dal. Here is the recipe for the tarka. It would be good mixed into any dal recipe. Heat the oil in a small skillet and brown onion. Add the garlic, red pepper and turmeric and cook 2 minutes, then tip into the dal. Mix in lightly. Garnish with coriander leaf. Mixed Dal Wash all dals (beans). Put in a saucepan with the tomato, curry leaves, lemon juice, salt and grated ginger. Add 4 cups of water and bring to a boil.
