Microwave Red Lentil Curry

2 tablespoon vegetable oil
1 small onion finely chopped
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon ground fennel
1/8 teaspoon tumeric (or
2 1/4 teaspoon prepared curry powder in
1 place of all spices)
1 cup split red lentils, washed
2 cup water
1 salt
1/2 teaspoon crushed red pepper flakes
1 (optional)

In a 2 quart microwavable glass casserold or handled bowl, combine oil and onion. Microwave, uncovered on HIGH for 2 minutes or until tender. Stir in coriander, cumin, cayenne, fennel and turmeric (or prepared curry powder). Stir in the lentils to coat them with the spices. Add water and covre tightly. Microwave on HIGH for 6-8 minutes until lentils are soft and most of the water has been absorbed. Let the dahl stand, covered for 15 minutes. Stir. Add salt and dried pepper flakes if desired.
