Gajar Halwa (Carrot Dessert)

1 water
14 oz can sweetened condensed milk
1 (not evaporated)
2 cup grated carrots
1 cup cooking oil, butter or
1 margarine
2 tablespoon chopped blanched almonds
2 tablespoon chopped raisins
1/4 teaspoon ground saffron
1 tablespoon fresh lime juice, heated

Add 1 can of water to condensed milk and bring to a boil. Add carrots and cook over low heat for 45 minutes, stirring occasionally. Add oil gradually. Cook until fat begins to separate. Then add almonds and raisins, and the saffron dissolved in lime juice. May be eaten hot or cold. Makes 6 servings. This is one of India's most delicious and nutricious desserts. From: HELEN JOLLY
