Chile - Ginger Chicken

2 inch piece fresh ginger
1 root
1/4 teaspoon salt
3 centiliter garlic, peeled
1 chicken, about 3 lb
2 hot green chiles
1 tablespoon oil, plus extra for
1 greasing
4 tablespoon vinegar
1 stuffing:
2 green chiles
1/2 teaspoon ground black pepper
1 lemon, seeded and chopped
1 cup dry bread crumbs
2 inch piece ginger root,
1 chopped
1 teaspoon caraway seeds
1/4 teaspoon salt
Heat oven to 300 fahrenheit. Grate ginger, garlic, and finely chop chiles, then mix them with vinegar and salt.
Stuff chicken with following mixture. Rub skin with oil, and spread mixture over chicken. Bake for 1 1/2 hours or done.
Lemon, ginger, and chile stuffing for chicken: combine chiles, lemon, ginger, salt, and pepper in a food processor, or chop well together. Blend the bread crumbs, and caraway seeds into the chile mixture. Stuff into chicken.
