Pork With Honey

2 1/4 lb lean boneless pork
2 tablespoon honey
4 green cardamom pods
3/4 inch stick cinnamon
1 teaspoon mace
1 teaspoon turmeric
1 teaspoon black pepper
3 small onions
2 cl garlic
2 tablespoon vegetable oil
1 tablespoon orange and lemon zest mixed
7 oz plain yogurt
1 teaspoon flour
Cut the pork into cubes. Grind the cardomom and cinnamon stick and mix with the ground spices. Finely chop the onions and garlic. Heat a heavy pan and warm the honey. Add the oil and when it is warm, stir in the pork. Cook until all the pieces are golden brown. Add 7 ounces of water and salt to taste. Simmer until tender, then turn up the heat so that all of the liquid evaporates. : Add the garlic, onions, spices and citrus rind and cook gently for a few minutes. Gradually stir in the yogurt beaten with the flour. Heat gently, then comver and remove from the heat. Keep warm for about 25 minutes before serving so the flavors amalgamate.
