Guava Chutney (Amrood Chatni)

4 small ripe guavas
2 tablespoon mint leaves
2 small fresh chillies
1/2 teaspoon fresh ginger root; sliced
1 sea salt; to taste
6 tablespoon lemon juice
Buy fresh ripe guavas from your Indian grocer; the chutney you make will taste out of this world. Adjust the consistency of the preparation to your liking by using more or less lemon juice. Serve as a side dish.
1. Wash and dry the guavas, mint, and chillies; then chop up.
2. Put these together with the ginger and salt on a "sil" and grind coarsely with the "batta" (or use a grinder of your choice).
3. Remove the thick pulp to a serving bowl and add lemon juice; blend thoroughly.
4. Chill before serving.
