Date & Banana Chutney (Margaret O'sullivan)

6 bananas; thinly sliced
225 gm stoned dates; chopped
225 gm cooking apples; peeled/chopd
4 onions; chopped
1 1/2 cup malt vinegar
1/2 cup candied ginger; chopped
1 teaspoon salt
1 teaspoon ground allspice
2 teaspoon curry powder
1 cup molasses

Put the bananas, dates, apples and onions into a pan with the vinegar. Cook slowly until soft, then mash the mixture to a pulp with a wooden spoon. Add the ginger, salt and spices. Continue to cook slowly until the chutney looks thick and pulpy, then stir in the molasses. If the mixture is too sticky, a a little more vinegar. Cook for 15-20 minutesw, stirring occasionally, until the mixture is a rich brown colour. Pour into jars and seal.
