Apple-Ginger Chutney

3 lb tart apples peel/core/finely chop
2 cup brown sugar; packed
2 1/2 cup cider vinegar
1 1/2 tablespoon salt
1 1/2 teaspoon ground ginger
1 teaspoon ground allspice
1 teaspoon ground cloves
1 green peppers; finely chop
1 medium onion; finely chop
1/2 cup preserved ginger in syrup finely ch; op
1/2 cup golden raisins
1 grated peeled and juice
1 of 1/2 lemon
