Dahi Chawal (Curried Yoghurt Rice)

15 gm ghee
1 medium onion, finely chopped
2 teaspoon curry powder
1 clove garlic, crushed
2 cup brown rice
4 cup vegetable stock
1/2 cup dry white wine
1 tiny pinch saffron powder
200 gm plain yoghurt
1 teaspoon chopped fresh coriander
Heat ghee in a pan, add onion, cook stirring, until light golden brown, add curry powder, garlic and rice. Cook stirring, 2 minutes or until rice is opaque. Add stock, wine, saffron to pan, being to the boil, reduce heat, cover with tight-fitting lid, simmer over very low heat for 30 minutes or until liquid is absorbed and rice tender. Stir in yoghurt and coriander before serving.
