Balti Fried Fish

fish, indian

1 1/2 lb cod, or any firm white fish
1 skinned
2/3 cup corn oil
1 medium onion -- sliced
2 medium tomatoes
1 teaspoon garlic pulp
1 1/2 teaspoon garam masala
1 teaspoon crushed dried red chillies
1 teaspoon salt
2 tablespoon cornstarch
1 tablespoon lemon juice
2 tablespoon fresh coriander(cilantro)

Cut the fish in cubes. Put in the refrigerator to chill. Put the onion in a bowl and add the lemon juice, salt, garlic, crushed red chillies, garam masala and cilantro. Skin the tomatoes by dropping htem into boiling water for a few seconds. Remove with a sloted spoon and gently peel off hte skins. Chop the tomatoes roughly and add to the onion misture in the bowl. Place the contents of the bowl in a blender or food processor and process 30 seconds. Remove the fish from the refrigerator and mix well with the onion mixture. Add the cornstarch and mix again until the fish pieces are well coated. Heat the oil in a Kahari. Lower the heat slightly and add the fish pieces, a few at a time. Turn then gently with a slotted spoon as they will break easily. Cook for about 5 min until the fish is lightly browned. Remove the fish pieces from the pan to absorb any excess oil. Keep warm.
