Biriani With Green Vegetable Curry

1 teaspoon coriander seed
1 teaspoon turmeric
1 teaspoon cumin seed
1 teaspoon cloves
1 teaspoon fenugreek
1 pinch saffron
3 inch cinnamon bark
5 black cardamoms
3 bay leaves
1 mild dried chilli
1 large blade of mace
12 black peppercorns
2 teaspoon salt
1 pint water boiling
12 oz washed basmati rice
2 teaspoon spice mixture
1 lb cubed meat (chicken, beef,
1 or lamb )
1 onion sliced
7 cloves garlic chopped
2 cubic inches ginger chopped
1 tablespoon butter
2 tablespoon vegetable oil not olive
1 then add
4 oz water
1 tablespoon ground almonds (optional)
4 oz plain yoghurt
1 remainder of spice mixture.

Make a spice mixture by grinding one teaspoon of each of the following in a coffee grinder: Coriander seed , turmeric, cumin seed , cloves, fenugreek, and pinch saffron, 3 inch cinnamon bark, 5 black cardamoms, 3 bay leaves, 1 mild dried chilli, large blade of mace, 12 black peppercorns and 2 tsp salt. Put to one side. 1 pint water boiling add 12 ounces washed basmati rice and 2 tsp of spice mixture. Boil for 5 minutes then drain and put to one side. 1 lb cubed meat (chicken, beef, or lamb ) 1 onion sliced 7 cloves garlic chopped 2 cubic inches ginger chopped 1 tblsp butter 2 tblsp vegetable oil NOT OLIVE Fry the above until meat is sealed and aroma from onion and garlic released. Then add 4 ounces water 1tblsp ground almonds (optional) 4 ounces plain yoghurt Remainder of spice mixture. Stir and place in bottom of a casserole dish put in rice on top and cover with a tight fitting lid and bake in oven at 170 celsius for 1 1/2 - 2 hours. To serve mix up meat and rice. (Optional; garnish with sliced hard boiled eggs, flaked almonds, sultanas, and/or coriander leaf.) Biriani is a Northern Indian Rice dish which is traditionally served at banquets and weddings. It consists of a meat and rice mixture which is baked in the oven with spices. The resulting dish is dry and so is served with a vegetable curry. Birianis are not hot, their flavour, though strong is subtle due to the blend of aromatic spices. Heat can be added by using as many chillis in the vegetable curry as you require.
