Chapatis
breads, indian
2 cup whole wheat flour
1 pinch salt
1 water
1 butter as required
Mix the flour, salt, and water and divide the dough into 8 pieces. Using more flour to prevent sticking, mash each piece into a disk slightly smaller than your fry pan. Fry the piece in butter. These will use up a *lot* of butter, and they sure are good.
For a slightly lower fat version, and almost as good, omit the butter and deep fry in oil. The oil has to be just barely smoking hot, and they will puff a lot as they cook. You will need almost a quart of oil to maintain temperature during cooking. From: Vern Wall Date: 18 Mar 97 National Cooking Echo Ä
