3 cup (850ml) milk
1 lb (480g) carrots
4 oz (115g) sugar
2 oz (60g) ghee (or butter)
2 oz (60g) blanched almonds
1 oz (30g) raisins
1/4 teaspoon cardamom
Peel and finely grate carrots.
Grind the cardamom seeds.
Pour milk into a saucepan, bring to the boil. Add carrots, cover and simmer for 30 min until soft.
Add sugar and stir until mixture thickens.
Fry almonds in ghee, on a low heat for 5 min, until golden.
Add almonds, cardamom, and raisins to mixture; stir and cook 5 min.
